...my freezer


It is now full of 16 ready to cook meals! I attended a freezer meal prep party. It took about an hour to throw together all the meals, and they seriously look fabulous AND healthy! I am excited to try them. I will post the recipes for some of them below.

I also spent the day, along with the rest of my family, to some thorough cleaning to our home. It feels so good to sit in here with my clean house, meals ready for half the month, and kids asleep!

Oh...and if you thought I was going to forget to post on the first day of my month-long daily posting, you were almost right. I just remembered about 10 seconds ago. That would have been embarrassing...

Peppered Chicken and Vegetables
6 chicken breasts
2 lbs. bag of frozen veggies
1/2 c. olive oil
1 tsp. Lawry's Seasoned Pepper
Combine all ingredients and make sure that both the vegetables and chicken have olive oil on them. Bake at 350 for 45 minutes or until chicken and vegetables are done to your liking. If the chicken is thawed before cooking, the meal will cook faster.

Texas Two-Step Pork Chops
6 boneless pork chops
4 1/2 tbsp brown sugar
1 1/2 tbsp Dijon mustard
2 1/4 c. salsa
Directions for preparation: Brown pork chops in skillet. Spray 9x13 pan and layer pork chops. Combine sugar, mustard and salsa and pour over pork. Bake at 400 degrees for 35-40 minutes or until done. Serve over rice. Can also be done in a crock pot. Just put it all in and cook on HIGH for 3-4 hours, on LOW 6-8 hours.
Freezer Meal Preparation: Put chops in gallon-size freezer bag. Make sauce and put in a second bag. Put both bags in a third bag and seal. When ready to make, thaw at room temperature. Brown pork shops and proceed as above.

Raspberry-Chipotle Pork Chops
1 cup Raspberry Jam
1/2 cup chicken broth
1/2 tsp Adobo sauce
2 Chipotles (chopped) - remove seeds to reduce heat
6 boneless pork chops
Whisk jam and broth together, added adobo sauce and chopped chipotles. Pleace pork chops in crockpot and cover with sauce. Cook low 6-8 hours or high 3-4 hours. Serve with rice.
If making a freezer meal follow above directions but place chops in plastic bag and cover with sauce and freeze.

Minestrone Soup
1 lb ground beef
1 lg onion, chopped
1 lg. potato, diced
1 c. carrot, sliced
1 c. celery, sliced
1 c. cabbage, shredded
3 1/2 c.canned tomatoes, undrained
1 crushed bay leaf
1/2 t. thyme
1/2 t. basil
2 1/2 t. salt
pepper to taste
1/4 c. regular rice
3 c. water
Brown meat and onion. Add other ingredients. Put in plastic bag and freeze if making freezer meal.Cover and simmer several hours or put in crock pot.

Hawaiian Chicken
6 chicken breasts
1 20 oz pineapple tidbits
1/4 c. brown sugar
Place chicken in a pan single layer. Pour pineapple over the chicken and sprinkle brown sugar over the pineapple. Bake at 350 degrees for one hour. You make also cook this in a crock pot.
For the freezer meal, put all ingredients in a freezer bag. Defrost and bake as directed above.

  1. I have thought about doing this so many times, but I keep backing out of it. Maybe I will take these recipes and bag up the meals so I have some. If you like them they MUST be good.

  10. I'm well known for my aversion to cooking, so I was about to just skim over this one-- but you hooked me with the Raspberry Chipotle Pork Chops, so I read on--and the ease of these leaves me completely inspired! My husband may send you a thank you note.
