This is a salad any man would approve of. Full of protein and a BBQ salad dressing. (It's pretty dang good to us women-folk, too.)
BLT Chicken Salad
1/2 c. mayonnaise*
1/4 c. bbq sauce (honey dijon)
2 tbsp. grated onion
1 tbsp. lemon juice
1/2 tsp. pepper
2 lg. tomatoes, chopped
8 c. leafy lettuce, torn
3 c. chopped, cooked chicken (grilled is nice)
10 slices bacon, cooked and crumbled*
2 hard-boiled eggs, sliced
Combine mayonnaise, bbq sauce, onion, lemon juice and pepper for dressing. Cover and chill thoroughly. Press chopped tomatoes in paper towels to remove excess moisture. Arrange lettuce on serving plates, top with chicken and tomatoes. Spoon dressing mixture over and top with bacon and sliced eggs. Serve immediately.
*We used lowfat mayo and "Real Bacon" pieces to cut out some of the fat and calories. It was still seriously delicious.

ReplyDeleteThird, I am not a tomato eater, I have only allowed them to pass my lips at all for a few years, and only in the form of salsa or cooked in something. So I would have no idea how there was a difference between good vs bad tomatoes. Do tell.
