I am not really a cake-mix kind of girl, but I usually do have a cake mix or two lying around in my cupboard for emergencies. Sunday was one of those moments.
I forgot that I offered to make treats for the 4 ladies I visit teach until it was an hour before we were supposed to leave. I hurried to my cupboard and grabbed a cake mix and made the following recipe. To my surprise...it was really good. If you are ever in a time crunch and need cookies, these are a great option! Enjoy!
Ingredients
1 (18 1/4 ounce) box devil's food cake mix
1/2 cup vegetable oil
2 large eggs
confectioner's sugar
Directions
Preheat oven to 350°.
Stir (by hand) dry cake mix, oil and eggs in a large bowl until dough forms.
Dust hands with confectioners' sugar and shape dough into 1" balls.
Roll balls in confectioners' sugar and place 2 inches apart on ungreased cookie sheets.
Bake for 8-10 minutes or until center is JUST SET.
Remove from pans after a minute or so and cool on wire racks.

My MIL used to make these for my husband as a kid. He always said they were pretty good. I'll have to give them a try.

ReplyDeleteHi, love your blog, i just stumbled across it from the vintage hem website. i am a fellow graphic designer as well! my mo-in-law makes these cookies, but a little differently; she sticks a rolo in the middle of the ball and bakes them. then puts a hershey kiss on top and bakes them until the choc melts then take them out and spread the choc on top real quick. sooooo yummy!
ReplyDeletethese are my favorite quick cookies! I also love to make a cream cheese frosting and make home-made oreos. Also good is strawberry cake mix!
