ORANGE BERRY GREEN SALAD
Raspberry Vinaigrette
½ c. Frozen Raspberries
¼ c. Red Wine Vinegar
¼ c. Sugar
1 Small Shallot, diced
½ t. Thyme
¾ c. Vegetable Oil
¼ c. Olive Oil
Combine raspberries, sugar, vinegar, shallot, thyme in a blender. Slowly add oil to blender and add salt and pepper.
Salad
2 c. Mixed Spring Greens
½ c. Candied Pecans
3 Small Clementine Oranges, sectioned (I cut mine in half for easier eating.)
1 c. Berries (blackberries, raspberries, strawberries)
Sliced Brie
Mix the vinaigrette with greens. Arrange berries, oranges, brie, and pecans on top of greens.

On a summer day, no food makes me happier than a nice, green salad. This one is as decadent as a green salad can be and the dressing is mmm mmm good.
