Computers and Cake.

My computer has been acting up for the past couple months and I'm finally going to take it in to a repairman today. Not sure if this is going to be a hard break or a welcome one. I'm quite attached to my mac, but it may be time for a replacement. I've had this baby for 4.5 years. Isn't that about the lifespan of a computer? I'm hoping the computer expert can fix it. I'm rather fond to this white imac.

My postings may be sparse while my computer is out of commission, so I thought I'd leave you with one of my favorite recipes ever. This may look like an ordinary chocolate cake, but it is so much more! Seriously Delish. (Check it out...no eggs! Vinegar in a cake? Don't be scared. It's really, really yummy.)
FAVORITE CHOCOLATE CAKE
3 c. all-purpose flour
2 c. sugar
1/3 c. baking cocoa
2 tsp. baking soda
1 tsp. salt
2 c. water
3/4 c. vegetable oil
2 tsp. vanilla
2 tsp. vinegar

In a mixing bowl, combine flour, sugar, cocoa, soda and salt. Add the water, oil, vanilla and vinegar and mix well (batter will be thin). Pour into a greased 9x13-inch pan. Bake at 350 for 25-30 minutes or until toothpick inserted near the center comes out clean. Cool completely. Frost with following frosting.

CHOCOLATE CREAM CHEESE FROSTING:
4 oz. cream cheese, softened
1/4 c. butter, softened
2 c. powdered sugar
1/3 c. baking cocoa
Dash of salt
2-3 tbsp. milk
1/2 tsp. vanilla

In a mixing bowl, beat the cream cheese and butter. Add the rest of the ingredients. Mix well.

  13. Okay, tried this tonight and it was a hit! We didn't have time to let it cool completely yet it was still super yummy. I just wish my frosting looked as dark and fudgy as yours. Thought it tasted rich and chocolatey it was a light, milk color. But I'll pretend it looked just like the picture!

    Definitely a keeper and one I'll make again very, very soon!

  16. My kids call this crazy cake because you can mix it in the pan. We seem to always make it on Sundays when we've run out of eggs. I'm glad you love this recipe too!
