Even though I am not really a steak or ribs kind of girl, occasionally I feel like eating them. (Especially when the short ribs are on a major sale like they were last week!) It has been so nice outside, so J and I decided that we wanted to have a little barbecue in the backyard.
This is my all time favorite recipe for ribs. It is much better than using those cheap bottled bbq sauces in the store. Try it! You will love it.
Here is how you make them:

1. Cut 4-lbs of pork spare ribs into serving-size pieces and wrap them in a double layer of foil. Place them in a 350° oven for about 60-80 minutes. This will get it cooked most of the way and ready for the grill.
2. Next, you need to make the marinade. Measure about 2/3 cup Asian sweet chili sauce into a bowl. (Most of these measurements are approximations. I don't use measuring cups very often.)
3. Add 1/4 cup ketchup to the bowl.
4. Mix in 1/4 cup Worcestershire sauce. The brand pictured above is my favorite.

5. Add 1/4-1/3 cup Soy Sauce to the mixture. (If you love the taste of Soy Sauce, use more. I usually stick closer to 1/4 c.)
6. Mix in 1 tsp. dry mustard and 2-4 cloves of crushed garlic. (If you like garlic like I do...use all 4!)
7. Add pepper to taste. I like a lot of pepper.
8. Place pork ribs in a plastic bag and pour marinade over them. Let sit in the fridge for 24 hours. (Or...at LEAST 6.)

9. Cook ribs on a grill for 30 minutes. (Flip them about every 5 minutes, basting with leftover marinade.) You can do this in the oven too, but it doesn't get that smoky grill taste that I LOVE.
10. ENJOY...and try not to get too messy.

ReplyDeleteI would cook with it if it was white wine or something... but it's called Purple Moon Shiraz or something like that... not sure how it's going to flavor things and I'm not sure I want to taste it to find out! But I might be feeling adventurous...
